Watermans: Eastern Mediterranean Dining by the Harbour
Watermans brings a fresh and vibrant Eastern Mediterranean experience to the heart of Barangaroo. Opening in November 2025 within the new One Sydney Harbour development, this stunning 120-seat restaurant marks the Bentley Restaurant Group’s return to the precinct. Led by acclaimed chef Darryl Martin, formerly of Barzaari, Watermans showcases the flavours of the Levant through a contemporary Australian lens. The venue features both indoor and outdoor dining, set beneath elegant greenery-wrapped pergolas and centred around a custom wood-fired grill and oven.

A Celebration of Levantine Flavours and Australian Produce 
The menu at Watermans highlights bold, vegetable-forward dishes and high-quality local ingredients. Standout plates include warm hummus with green zhoug, labneh with salted cucumber and lemon jam, pickled watermelon and raw tuna salad with sumac, sweet and sour Abrolhos scallop with sesame praline, whole roasted John Dory with chermoula and pomegranate-glazed slow-cooked lamb shoulder with pickled radish and black lime. Under the guidance of co-owners Brent Savage and Nick Hildebrandt, Watermans delivers a refined yet welcoming dining experience that reflects the group’s longstanding commitment to exceptional food, wine and hospitality.

Located just metres from the waterfront, Watermans enhances the evolving dining and lifestyle offering at Barangaroo. Designed by Chris Grinham of H&E Architects with creative direction from Pascale Gomes-McNabb, the space combines modern-luxe finishes with a relaxed coastal sensibility. Open for lunch and dinner seven days a week, Watermans is set to become a new go-to destination for locals, visitors and office workers seeking elevated Eastern Mediterranean cuisine in one of Sydney’s most spectacular harbourfront settings.
